There are recursive constructs in UBL ... looking at the models in HTML:

... and I see there are recursive constructs in both Invoice and 
Order Response.

I am unaware of the workings of BizTalk, but I would hope any XML 
processing system would accommodate recursive constructs.

It sounds like you are using the UBL schemas unchanged.  Usually one 
deploys a subset of UBL (possibly extended if you need things not in 
UBL).  UBL is the country standard for government invoicing in both 
Denmark and Turkey.  UBL is part of the PEPPOL project for 
pan-European eProcurement.  In all cases, user communities create 
that subset of UBL that satisfies their needs, without encumbering 
themselves with the *entire* specification.

I am delivering a hands-on class for UBL customization in Trondheim 
Norway in June.  Please see our home page for details.  I'm also 
teaching XSLT/XQuery in Trondheim the week after the UBL class.

You will find more UBL developers with experience on the UBL-Dev list.
