I would like to change my default XML parser to the May preview release, but was worried that Stylus 2/0 would not work when setting the processor choice to IE. The May preview release uses the W3C XSLT namespace, not the IE5 namespace, and I know that Stylus checks the namespace to make sure it is valid for the processor choice.

You're right, when using the IE parser and processor, Stylus forces the old namespace. We'll allow an override in the next version. (The about-to-be-released version is already frozen.)
A workaround is to leave Stylus in native-processor mode, save your stylesheet and hit F5 in an instance of IE.
