Or even better, put the condition in the match pattern:

  <xsl:template 
   match="Species[Extinct='False' and Genus_Name='Casuarius']">       
      <p>species name is <xsl:value-of select="Species_Name"/></p>      
  </xsl:template>

  <xsl:template match="Species"/>
