| is not boolean "or" (the orperator for that is or) so you want

<xsl:apply-templates select="doc[N1='xxx' or N2='yyy']"/>

| is the union of node sets.

A | B 
is the union of the set selected by A and the set selected by B.
Now that is the things selected by A or B so often you can read | as
"or" but it is not a boolean valued operator 9so can't be used in a
predicate) it operates on two node sets and returns a node set.
