XSLT is an XML *transformation* language; the XSLT visual mapper is a visual way to create XSLT that transform source XML documents into specific target XML structures.
HTML and Word (in their typical form) deal with *presenting* information; in general you can think about using XSLT to transform an XML document into HTML (which is a fairly typical XSLT usecase); but the only way to export a mapping among XML documents to HTML or Word it would be through an image or some different form of documentation. Stylus Studio can export Mappings as images, if that's what you are looking for.
