because it makes your file non portable for no good reason.
d-o-e doesn't work in (say) mozilla, you get no warning: you just get
what you asked for, the characters   
IE understands utf8 or latin1 (and other) characater data quite well so
if it isn't understanding non breaking spaces then something else is
wrong, and other characters will be wrong as well, so just using d-o-e
for 160 is unlikely to be a fix (unless you are writing US English and
_never_ use any other character than 160 that is not in the ascii range)
