Use <xsl:output method="html"/> as a child node of the <xsl:stylesheet>
node.

Then, in your <option> tag, put this:

<option selected="selected">

This will be converted in the output tree into <option selected> (as
required).

more indepth discussion of <xsl:output> and what it does.
