That's pretty much the way I cut tracks on songs too, except for the being drunk part. There is the 'even the kitchen sink' version where it's about adrenalin and serendipity, then there is the "take out the bad bits and smooth out the delivery' version that gets released. It is possible and all too easy to record all of the life out of a piece if one makes a third pass. IIRC, the ancient Persians supposedly made all important decisions twice, once drunk and once sober. Presumably they got drunk so as to lower their inhibitions about out-of-the-box solutions, and then waited till they were sober to check if the supposed solution was actually sound.
