I'd think that some of the most influential vocabularies would be the W3C
specs themselves and some the non-W3C efforts, so my list would include:

XSLT
W3C XML Schema (and other XML-based schema languages)
SOAP
WSDL, UDDI
ebXML, UBL
XBRL

And with a bullet, looking toward the future:
SVG                  [I want my, I want my, I want my SVG]
XQuery
