The mime type (by which in Web apps one normally means the
value in the HTTP "media-type" header) should generally be
considered authoritative per IETF dogma.  It is fair to wonder
where media types come from... quite often from a table in
the web browser config file that is based on file extensions.

But anyone shipping out data who takes internet protocol 
integrity seriously probably will take the trouble to get
the media-type right.  Mind you, many web sites don't, sigh.
