Apart from TEI of course, there is an interesting project from Charles
Mueller in Tokyo: it is a multilingual dictionary of Buddhist and East
Asian Literary Terms. Its base is English, with Chinese, Japanese
(kanji, kana and romanji with macrons) and Korean entries.

Charles is a very interesting guy; he has been working on this project
through many format changes. Last year he was doing it in XML, but he
has now moved back to loose SGML: an HTML superstructure with XML-ish
data islands.  You can see that his approach is to use as specific
markup as possible: his tagset is probably only appropriate for his own
special documents. That is nice to see, amid the current conformism :-) 
(I am not sure of the specific reasons why he decided to abandon XML

subject of multilingual markup.
