How can I change the default settings so that when I create a new stylesheet in Stylus, it is automatically set to use XSLT 2.0? All I've ever been able to get is v1.0, and I tire of changing it manually because all we use is v2.0.

Starting from Stylus Studio X14 Release 2 we added a global option to set the default XSLT version for newly created XSLT documents.
