My source data is in XML. I want to transform the source into four different XML files. Each of the four outputs use a different name space and schema. There are many similarities, but some use different field names for the same field. Some allow multiples of a field, others do not. Some group fields, others don't. Not all fields are in all output files.
I'm aware that I could write a custom transformation for each, but I was looking for a simple drag and drop type of UI. The custom XML conversion doesn't seem to like a XML input.

Custom XML Conversions are for converting things that aren't XML
into XML. Your source is already XML.
What might be easiest for you is to build four different transforms,
each from the input file to one of your output formats. You can use
the XQuery mapper, switch to 'mapper' view, load your source into the
left-side pane and the schema into the right-side pane, and map away.
The mapper will generate your code.
Then you can either run the four different programs separately, or
combine them using the XML Pipeline.
