Documentation says:
To associate an XML Schema with a project:
Right-click the project folder you want to associate with an XML Schema.
Select Associate Schemas to Folder from the shortcut menu.

When I right click the project folder in the Project window I do not get
a 'Select Associate Schemas to Folder' in the dropdown menu.

What am I doing wrong?

Do you see a different menu from the one attached?

yes. I can not remember specifics since the trial version expired this morn. But I do remember it was longer by at least 4 or more options (some not active of course). But for sure no 'associate schema ...' option.
