To answer my own question: I misunderstood. The tool I needed was normalize-space(), i.e.:

...
<xsl:for-each select="NewDataSet/Table">
		<xsl:sort select="normalize-space(Currency)" order="ascending" />
		<xsl:sort select="normalize-space(Name)" order="ascending" />
...
