 I've been trying various methods and looking at the spec but I have not found a way to center a table or graphic on a page. I'll assume you mean centring across the inline-progression direction. A table is centred by using text-align="center" on the <table-and-caption> parent of <table>. A graphic is centred by using text-align="centre" on the <block> parent of the graphic.
