But it may be worth observing that in XSLT 2.0 they're subtly different: apply-templates will process the text nodes, whereas value-of will give you the typed value converted to a string. If the data is "10.00" and the schema type is xs:decimal, then apply-templates will give you "10.00" while value-of will give you "10".
