They would do. ISO-8859-1 is essentially a subset of UTF-8==Unicode. UTF-8 is 
I expect the common default.

I think you can restrict the output to only ISO using <xsl:output 
encoding="ISO-8859-1"/> as suggested at 
http://www.w3schools.com/xsl/el_output.asp
..but this is a guess, I'm no expert in XSL.
