I have begun reading the XSLT programmers reference (2nd edition) by Michael
Kay. It refers quite a lot to XSLT 1.1 but I cannot find anything about XSLT
1.1 on www.w3c.org. There is XSLT 2.0 as is the case on this list too. What
is XSLT 1.1?

The XSLT 1.1 effort was terminated before becoming a W3C recommendation. The parts of that work that were considered useful were brought into XSLT 2.0, which should become a final recommendation some time this year (this summer?).
