You didn't specify how the text node to be changed should be identified, but hope this will help you in writing the stylesheet you need.

<xsl:param name="dynamictext"/>

<xsl:template match="text[@id = 123]/text()">
  <xsl:value-of select="$dynamictext" />
</xsl:template>

<xsl:template match="@*|node()">
  <xsl:copy>
    <xsl:apply-templates select="@*|node()"/>
  </xsl:copy>
</xsl:template>
