At the risk of being corrected by the experts, of which I am not one, I would say that it is because ancestor::*[@att] is selecting ancestors (that have an @att attribute), so ancestor axis order (reverse) reigns, whereas (ancestor::*/@att) is selecting the child @att attributes of (ancestors), and so the child axis order (document order) reigns.
