xml utf8 unicode

there's nothing wrong with your output, it us using the utf-8 encoding
and if you read it in any utf8 aware system the characters will look
correct. (Any XML system cab read utf8) If you read the file in a system
designed for latin 1 then you see th wrong characters of course (extra
accented A's) but that is always the case if you read a file with the
wrong encoding.

You can request the file is output in iso-8859-1 using an encoding
attribute to xsl:output, but note that then not every XML system need
accept the file.
