Think of xsl:value-of as pushing your motorbike forward with your feet. It's possible and sometimes useful, but it won't get you far. And your motorbike has an engine. Beginners are sometimes a bit scared of the engine, or they don't even think of it (it is unfamiliar). So they use their feet. But learning XSLT is learning to use the engine.
