You use "text" output to output characters that don't have to be xml - that is, well-formed - and don't have to be html either. For example, you can get a real "<" or "&" in the output. With "html" output you can get non-wellformed output as long as it's still html. For example, <br/> in the source transforms into <br> in the output.
