On a more relevant point then what format the document is saved as ...
Your description so far sounds identical to relational normalization theory.
Is there more to it than that ?   I know nothing about "category theory" didn't even know it existed so I am admittedly ignorant.  But the example is right 'out of the book' for how to normalize data in relational theory.
(which btw is typically not what is done with XML but that's neither here nor there ... or maybe it is)
