Use "zh-pinyin".

There is no standard way to represent this.  You could write
"zh-Latn-x-english" to show that it is an English-style version of
Latin-script Chinese.

You could represent this by changing "zh" to "zh-cmn" or just "cmn" in
the tags above, with some loss of interoperability.
