Isn't that just a definition of 'sign' Ron?

 An ink signature on a dead-tree document is one thing...

If you stand up on court and testify that the data received was
the xml instance at hand, wonder how that might stand up?

Rendering an XML instance should stand the test of time
better than PDF surely?
