My technical/consulting resume is in XML format and I use a modified version 
of XML Resume tools ( http://xmlresume.sourceforge.net/ ) to render it in 
PDF, RTF (word .DOC), HTML, Text and Text without line breaks (for streaming 
into job portals like Monster).

Also, my GPS Java library (which provides a high level API for interfacing 
GPS devices and runs on PC/Mac/Linux/PalmOS and Embedded Java chips like 
JStamp and TINI) optionally generates XML output.

Just a couple of off the wall ones.
