There are some subtleties in each one's use, but most people advise the use of xsl:apply-templates unless you actually need xsl:for-each. xslt questions are best asked on the Mulberry xslt list - this question comes up often enough, you can search the archives and xslt FAQ sites (like the dpawson site).
