Try <?xml version = "1.0" encoding = "iso8859-1"?> If you have a hex editor, you can double check. If at the point you are expecting è you have the hex code 0xE8 then you are probably using ISO 8859-1. If it takes two bytes (with the first byte > 7F and the second byte < 7F) then it should be UTF-8.
