The xhtml spec, appendix C section 11 (see
http://www.w3.org/TR/xhtml1/#guidelines) seems to imply that it should
either be text/html, text/xml or application/xml depending on what you
intend to do. Of course, if you don't want older browsers to display the
source or to offer a download then text/html is the only way to go. However
according to chapter 5, it doesn't make any recommendation as to MIME
labelling.
