While this is true, knowledge of the "pizza chef" (which probably needs additional explanation for anyone who isn't already aware of it [along with the grand tradition of food metaphors within the TEI culture]) is not exactly wide-spread. But like so many other DTDs developed with interchange as a primary goal, the TEI DTD can be intimidating to anyone who isn't intimately familiar with its gory details -- and a certain amount of familiarity with the gory details will also help someone trying to use the pizza chef. http://www.hcu.ox.ac.uk/TEI/newpizza.html .
