You can generate one for any version of X12.
Go to File|Document Wizards and choose the X12 to XML Schema wizard.
You can then select the 837 transaction set for whatever version of
X12 you wish to use.
It will then create a schema for that specific combination.

But if I do that, the schema that stylus studios produce isn't the 837 health care claim professional, is simply the 837 health care claim, what I have to do if I want the 837 PROFESSIONAL schema?

The schemas we generate are those that correspond to the EDI
transaction sets. As of this, we don't have a 837P transaction
set, so we don't prepackage the ability to generate a schema
for it.
If you have a further reference on this, we'll be happy to track
it down, but I don't see anything in our EDI standards subscriptions
referencing 837P up through 005030.

I am evaluating Stylus Studio as well and am running into the same problem. The 837 comes in 3 different formats (Professional, Institutional, and Dental). These specs are published by WPC-EDI (http://www.wpc-edi.com/content/view/400/199/)

We don't have those variations built-in at this point.
We could, but we'd have to have some sort of cost-justification,
as the standards are fairly expensive in relation to the cost
of individual Stylus Studio licenses.
