I'd like to be able to double click on a stylus studio project file and have it open. Is there some way I can do this?

Not automatically, in the current build; you would have to manually
associate Stylus Studio to the .prj extension.

It's in our PCR list to let you ask Stylus Studio to become the default
handler of .prj extensions on your system; it will be surely there by the
next public build.
