So my xml document contains a element like this...

and I am looking to translate it too....

<category>/Women/Casual/Loafers</category>

Replacing Shoes- with '/' and also any other '-' with '/'

Is this possible?

It's trivial using the fn:replace() and fn:translate() functions in XSLT 2.0 (or XQuery); it's a bit more painful using XSLT 1.0, as you'll need to play with string manipulation a bit more. See the XSLT/XPath specifications on W3C for more details.
